Dr. Margaret Slavin, RD, is Associate Professor in the Department of Nutrition and Food Studies, and an affiliate of the Center for Study of Chronic Illness and Disability and the Krasnow Institute. Formally trained in both food analytical chemistry and clinical nutrition, Slavin’s research interests are primarily focused where food science and nutrition overlap to improve human health. She believes that food science methods should be used judiciously to improve the nutritional composition of the food supply and that food literacy enables healthy food choices. Slavin is an emerging expert in the role that diet plays on migraine, including the impact of individual food chemicals and dietary patterns.
Before coming to Mason, Slavin was a Visiting Assistant Professor in the School of Agriculture and Biology at Shanghai Jiao Tong University, Shanghai, China. She completed her dietetics internship through the University of Pittsburgh and the University of Pittsburgh Medical Center.
